Nice rice pudding using a double-boiler method

Ingredients

  • 1 cup arborio rice 12
  • 4 cups whole milk
  • 1 can (14 oz) of Eagle brand sweetened condensed milk 3
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Ground cinnamon
  • Butter
  • Raisins (optional)

Condended Milk Alternative

  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup heavy cream
  • 1/4 cup milk

Directions

  1. In a double-boiler 4, bring rice, milk, condensed milk, and salt to a boil
  2. Reduce heat, cover, and simmer for 1 hour
  3. Add vanilla and 1 tablespoon of butter
    1. Add raisins if desired
  4. Serve warm, top with butter and cinnamon

Condended Milk Alternative

  1. Beat together sugar, egg, cream, and milk (or half and half)
  2. Stir mixture into rice

  1. When cooking aroborio rice, minimize stirring as additional starch is realease when stirred. ↩︎

  2. Other rice may be substituted, but arborio will absorb the milk and take on a creamy texture. If using another type of rice, ensure that the rice is very soft to avoid hard and crunchy rice after refrigeration. Also ensure that you stir regularly if using rice other than arborio to keep rice from clumping. ↩︎
